The Beach Lady & her forever Love...American Beach



I wrote this a couple of years ago & decided to share it here..
 I am still completely fascinated by this Incredible Woman !!! 

 The Beach Lady & Her Forever Love 





When I was a little girl,  my Aunt Christina, showed me a newspaper clipping of a woman. I thought that women was the most beautiful woman in the world. In the picture, it showed her 1 long Dread Lock, and  her extremely long, curled nails. At one time her nails where a foot and a half long, just on her left hand. I was fascinated to find out more.. Not until I was in my 30's, did  I venture to learn more about this Beautiful Woman. 
      
MaVynee Oshun Betsch " Beach Lady" 
was the 7th generation grandchild of Zephaniah & Anna Kingsley, a slave that married a prominent Plantation owner in North Florida. They Owned the Kingsley Plantation .
You normally would not hear me speaking kindly of a place such as this , but this plantation was different in so many ways.   African-American archaeology originated from the studies of the Kingsley Plantation.  I will not go into it more here, but you can find articles for yourself and see what interesting people came from the Kingsley Plantation.
  
It is an incredible place to see and you can take a tour of the 
 " Kingsley Plantation today.


The Beach Lady,  is the  Great, Great Granddaughter  of , A. L. Lewis. He was a a Co founder of the " Afro-American life Insurance Company, the first Insurance company in  Florida. Mr. Lewis went on to become the 1st Millionaire in the state of Florida. In 1935 during major segregation , Mr. Lewis founded Florida's 1st Black beach community & resort located on the Eastern shore of Amelia Island
 it is called "American Beach".

Today, Beautiful  American Beach is  being steadily sold . The Beach Lady made it her life to preserve what is left of  American Beach. American Beach is listed on the Florida Black Heritage trail and the National Register of Historic Places.

MaVynee Betsch, graduated Oberlin Music Conservatory in Ohio, she then studied voice in Paris & London. She went on to become a grand Opera singer ,throughout Germany in the 50's & 60's. In Germany she is legendary even today. She began to miss Florida, so she decided to go home.


The Beach Lady, became a passionate conservationist & activist. She wore her 6 ft lock of hair across her shoulder, around her waist & over her arm to honor the curve of the River Niger in West Africa.  Her hair and clothes covered in buttons to express her political & ecologist values. She gave away her life savings to over 60 Environmental Organizations and causes. She once lived anywhere she could, but eventually she took on an apartment at American Beach.

 Her brother & sister are just as intriguing ... Dr. Johnetta Cole, the only female president of two Black colleges, Spellman College and Bennett College & John Betsch a Jazz Musician in Paris. 
The Beach lady was honored by the Dalai lama, featured in Smithsonian magazine, USA Today, NY times and on PBS & other networks for her many great deeds.

 In the many articles I have read about her , she often spoke of becoming a butterfly. She decided that once she passes, she would fly over the sand dunes of her Beloved  " America Beach".  My family that lives in the area swim & fish at American Beach often.The last time my Aunt Mildred saw her she was throwing an offering into the ocean... Always giving Honor & Thanks to Yemaya.

I too went home to Florida and finally met this magnificent woman. All around the outside of her small beach home she had many beautiful candles & beach finds. 

My Husband and I spoke with her for awhile, before a cleansing summer storm began. I then asked her about her Beautiful Sand Dune, that you could see from her front yard. She had once spoken of it, saying that when she died, she would float over her Beloved Sand Dune, of American Beach, as a Beautiful Butterfly...

She did it !
 " The Beach Lady ", became a Beautiful Butterfly and floated over her Sand Dune . September 5, 2005.

A fever saved our infant son !!

Many think that because we are a Chiropractic family & use natural healing methods, that we do not use traditional medicine at all.

It is because we are a Chiropractic Natural healing family & believe in the power of the body, that we were able to Protect our young infant son from death.

Tuesday 1/26/2010 5am. Baby Z is 3 weeks old!!

I had fallen asleep rubbing Baby Z's back and awoke to a really hot baby on my chest..Upon taking an internal temp, I found his temp to be 102. We immediately called his doctor and we were told to take him to ER immediately and expect to be admitted. I had never experienced a temp this high in one so young, but I knew anything over 99 needed to be looked at.

Fever is one of the most powerful defense mechanisms we have against disease and infection in our body. It is a common symptom in childhood, however in anyone less than 30 days old is not considered Normal !

In older children and adults, fever actually strengthens the immune system and can help to prevent susceptibility to other illnesses. If it were one of our older children, I would have reacted much differently & allowed the body to work with or without the help of meds.

We arrives at the ER, they ran many test and he was admitted . It was determined that he had a
( UTI ) Urinary tract infection, within the upper tract. The fever presented because the body way trying to fight the infection that had spread to his blood stream. We got the news in the middle of the night . The fact that is was in the blood stream was the scary part. The doctor told us that the infection spread quickly & the fever was the only thing that could have told us something was wrong . If we had of waited to bring him in we could have lost him.

Family Beds are important ! What would have happened if he was lying in a crib. At 3 am he was fine, happy & no fever. Two hours later, because he was sleeping near... it allowed us to react quickly !!!

Baby Z was started on IV antibiotics. (long story in itself) The antibiotic treated the infection. The fever was allowed to gradually go down by itself !! I opted not to give him Tylenol for the fever because the body was working & the fever was getting increasingly lower !!

They were treating the cause NOT the symptom...



After 8 days in the hospital...
Baby Z is doing well. The fever is gone & the test all came back with good results. It is not known how he got a UTI. It is not a common thing for boys, but it does happen. It was NOT, because he is not circumcised as some wanted to speculate !!! Just one of those things.

Being well informed helped our family through a week of hospitalization.my Hubby is a Chiropractor & I was trained as a Chiropractor, so this does give us knowledge to and extent . The Key is ask questions stick to what you believe, but be willing to see both sides. Be an educated consumer.

We follow the natural rhythm of the body & let it tell us what it needs. We are not against medicine we are against the overuse of it. This time it was needed and gladly accepted.

Natural Healing & living is my passion...I do what I can and continue to educate myself. ..


As a Chiropractor , my husband can adjust the body to help a fever go down quickly, but his job is to assist the immune system by keeping the nervous system clear therefore to allow the body to work .

January 2010..

Our family has recently been blessed with a new addition !!! Born 01/01/2010

This January has been the busiest in all of my 39 years.. I thank Goddess for giving me the strength to be the strong Earth Woman that I am.. Sistahs we all have incredible strength within us. Share with yourself & surround yourself with other Sistahs that you can Empower & that can Empower you !!

So I had my 4th child. At home water birth !! Stuck in the house for 3 week due to intense cold weather. then...Child Hospitalized for a week !!!

Our Natural living Family + mainstream Hospital .. scary. We survived, but I learned some things that I will continue to share here. Listen up !!!

Encountered a few issues, but overall they took care of my little one. I realized I need to share more here. Even if few are listening. I have something to say & those that ned will find..

Vietnamese chicken noodle soup recipe !!! We Love " Pho Ga' "



Pho ga is , As all my friends know is my absolute favorite food ! So when my friend in NYC asked me to post My Pho Ga recipe... well, how can I resist.
It is cold here in Texas & time to bring out the immune boosting foods. This is how we do it in our household. Our flu shot is good old fashion nutritional foods. A friend actually taught me how to make this soup, so when I make it I compile different recipes. The correct pronunciation for pho ga is "fuh-gah"

This soup is a labor of Love, but so well worth it !!!

First Your Broth ingredients...
2 Lrg yellow onions, unpeeled
4 inch fresh ginger, unpeeled
1 Whole Chicken 3 1/2- 4 lbs, Naturally raised. Remove fat & tail
3-4 lbs chicken bony chicken parts + wings from whole chicken
5 star anise
1 tbsp. fennel seeds
1 whole cinnamon stick
4 cloves
2 tbsp coriander seeds
5 qts water
1 whole clove of Garlic, top cut off
1 1/2 Tbsp salt
3 Tbsp fish sauce
1 1/2 inch chunk rock sugar ( buy at your favorite Asian Market)
1 small or 1/2 large bunch cilantro (bound stems about 1 inch in diameter)

1. Grill for flavor
Char grill your onions and ginger. Place directly on the cooking surface of a medium-hot grill or a gas stove with a medium flame, or on a medium-hot burner of an electric stove. Let the skin burn. Rotate onion and ginger occasionally to char each side.If indoors use vent !!! Grill for about 10-15 minutes. Til soft & fragrant. Do not have to completely blacken it.Then remove from the heat and let cool.

Rinse the cooled onions under warm running water, rubbing off the charred skin. Trim off the blackened ginger root. Use a vegetable peeler, paring knife, or the edge of a teaspoon to remove the ginger skin. Wash off any blackened bits. Halve the ginger lengthwise and smash. Set the onions and ginger aside.

2. Clean & wash chicken
Rinse & wash the chicken under cool water. Detach each wing then add the wings and neck to the chicken parts. Remove any loose pieces of fat from the chicken parts. Break bones to enrich the broth.

3.Ahhh Fragrant Spices
Add star anise, fennel seeds, cinnamon stick, cloves to a dry pan. Toast these in the dry pan on low heat for 2-3 minutes, be careful not to burn the spices. When the aroma is apparent, turn off the heat and remove the spices from the pan. Tie up the spices in some cheesecloth and string.

4. Clear Broth is a Must
For a clear broth, parboil and rinse the chicken parts. Put them in a stockpot and add cold water just to cover. Bring to a boil over high heat and boil vigorously for 2 to 3 minutes to release the impurities. Dump the chicken parts and water into a clean sink and then rinse the parts with water to wash off any clinging residue. Quickly scrub the stockpot clean and return the chicken parts to the pot.

Pour in the water and add the whole chicken to the pot, breast side up.
Bring to a boil over high heat and then lower the heat to a gentle simmer. Skim off any scum that rises to the top. Add the onions, ginger, salt, fish sauce, rock sugar, Spice pouch and cilantro. Cook, uncovered, for 25 minutes, adjusting the heat if needed to maintain a gentle simmer.

5. Chicken is Cooked
After 25 min the chicken is cooked. Remove the chicken and put in a bowl. Rinse the chicken with cold water and drain well, then it set aside for 15 to 20 minutes until it is cool enough to handle. Meanwhile, keep the broth at a steady simmer.

When chicken is cooled, use a knife to remove each breast half and the whole legs (thigh and drumstick). Do not cut the pieces. Set aside on a plate to cool completely. Once cooled shred in nice size pieces. Then cover with plastic wrap and refrigerate. Bring to room temperature before assembling the bowls.

Return the leftover carcass to the stockpot and adjust the heat to simmer the broth gently for another 1 1/2 hours. Avoid a hard boil, or the broth will turn cloudy.

6. Strain the yucky stuff
Strain the broth through a fine-mesh sieve or a cheesecloth positioned over a pot. Throw away the solids. Use a ladle to skim as much fat from the top of the broth as you can. Taste and adjust the flavor with additional salt, fish sauce, and rock sugar. Your broth should be VERY flavorful, because there is no salt in your noodles & other garnishes. There should be about 4 quarts (16 cups) broth.

7. Build your Bowl
To cook the noodles, bring some water to a boil and drop the noodles in for no more than FIVE SECONDS . Add Noodles, Broth & shredded chicken to your bowls.

Garnish Time
Very important that you use Fresh Herbs !

Garnish Ingredients include..
Green Scallions
Thinly sliced White onions
Long coriander ( culantro ), similar to cilantro
Wedges of Lime
Slices of Jalapeno
Basil Leaves
Bean Sprouts
Hoisin sauce (optional)
Red hot sauce (optional)

Ghost pepper will make you want to die !!!

Our Entire family Loves Hot peppers. The Bhut Jolokia or Ghost pepper is one that I have not tried yet & not sure I ever will. It is the Worlds Hottest Pepper.

Bhut Jolokia Pepper, (Ghost Pepper)was recognized by Guinness Book of World Records in 2007 as the Worlds hottest Pepper. This Chili pepper is grown in North Eastern India state of Assam. This is no regular hot pepper measuring at a rating of 1,041,427 Scoville heat units, the Bhut Jolokia is deadly hot. It is said to be hotter than you can imagine.




The Ghost Pepper is used as a spice in food or eaten alone. One seed from a Bhut Jolokia can cause intense pain sensations in the mouth for up to 30 minutes. It is sometimes used as a cure for stomach ailments. The Peppers are even used to keep wild elephants way from villages. In 2009 scientists at India's Defense Research and Development Organization found that they could make hand grenades with the Ghost Pepper. The chiles are a non-lethal way to control rioters.


This is good news for this remote region of India. The export possibilities are tremendous. I first saw this pepper mentioned on a television show called "Man vs Food". I was curious as to why the challenger could only eat 2 of his 6 ghost pepper hot wings. So I goggled the ghost pepper & Wow what a cool Plant.
